🍲 3 vegan chili recipes for all appetites


Guess what? Yesterday was another food-related national holiday - National Chili Day 🀩

First National Banana Bread Day this past Sunday, now chili... Someone in the Department of Coming Up with Ideas for National Holidays must have been hungry!

Today I'd like to share not one, not two, but THREE vegan chili recipes: one with barley, one with sweet potatoes, and one with vegan sausage.

(Hope we have better luck with this than Kevin did! πŸ˜…)

➑️ Vegan chili with beans and barley. Beans are a common chili ingredient, but grains like barley - not so much. Turns out, barley adds a nice "meatiness" to the texture of this whole food, plant-based chili. Bonus: if you're a long-time vegan runner, you might like my story of what (or who, to be exact) inspired me to create this recipe.

➑️ Vegan sweet potato chili with TVP. Textured vegetable protein (TVP) is the ingredient I use to achieve a "meaty" texture. If you can't find TVP, this recipe will work just as well with crumbled vegan sausage or chorizo.

➑️ Ultimate vegan chili. Out of these three chili recipes, this is the one I make most often. Why? Because it's easy, quick, and I almost always have all of the ingredients on hand. I'm also sharing a tip for how to thicken chili (this one or any of the above) without loading it up with fat of cooking for a long time.
