π Happy National Banana Bread Day!
In case you missed it (and I don't blame you π), this past Sunday was National Banana Bread Day. To celebrate this glorious occasion, I'd like to share two vegan banana bread recipes with you today: one "naughty", one "nice", both made with no added oil or vegan butter. Let's start with... #1: The Nice OneMy vegan banana nut bread with raisins is one of the first recipes I've ever published on Vegan Runner Eats, long before I learned all the tricks of food bloggery. (Believe it or not, there's A LOT to learn. People write books about it.) This is also one of the first recipes I made with my then-2.5 year-old daughter. The reason I'm calling it "the nice one" is because it's whole food plant-based, oil-free, and made with simple, easy to find pantry ingredients. When developing this recipe, I decided to add walnuts and raisins into the batter. Walnuts are pretty common in banana bread recipes, but raisins - not so much. I like that they add bursts of extra sweetness into every bite. However, feel free to omit either one of them (or both). Check out the recipe over here:
#2: The Naughty OneIf you're in the mood for a more decadent banana bread, check out my recipe for vegan chocolate chip banana bread π When I was testing this recipe, I tried to achieve the scrumptious and moist texture that banana bread is known for WITHOUT relying on vegan butter or oil. After some trial and error, I finally found a perfect secret ingredient that allowed me to do just that. Bonus: it also helped eliminate the need for vegan egg substitutes of any kind. (Not that I'm against some aquafaba or flax egg here and there but still). So, what's that secret ingredient? You've got to check out the recipe on the blog to find out:
