➡️ A wholesome side dish for any meal

Today I'd like to share with you a recipe for a wholesome and versatile side dish that works well for any meal of the day.

Meet my mayo-free vegan warm potato salad.

The main component of this dish is delicious pan-fried potatoes. I call them pan-fried, but don't close this email in horror if you're only interested in healthy recipes: there's very little oil involved.

Other ingredients include chickpeas, peppers, onions, mushrooms, and fresh greens like spinach or arugula. They add nutrients, fiber - and loads of flavor, of course!

I love this warm potato salad as a side dish for breakfast or brunch. It's also great on top of some fresh greens as a lunch or a light dinner option.
