🌮 Vegan tacos that even omnivores love


A quick announcement before we proceed:

April is here - and you know what that means?

The latest Food Revolution Summit Docuseries is about to be released 🥳

To refresh your memory: this is a free online event that shares the latest knowledge about how our diet impacts our health.

Over the course of 8 docuseries-style episodes, some of the world’s top health and nutrition experts (not some fad influencers, but actual doctors and researchers!) will share their expertise in an approachable, easy-to-understand way.

This way, regular people like you and I could use that information to make better choices in our everyday lives.

This year's episodes will cover:

  • Staying fit and active for life;
  • Learning to navigate through dietary fads that constantly pop up on our media horizon.

The summit starts on Wednesday, April 24th, and lasts till May 1st (the following Wednesday).

On to the tacos!

You'll probably agree: every vegan needs a go-to recipe that can win over non-vegans when we’re cooking for them.

If you don't have a recipe like that, or if you'd like to add one to your already existing lineup of omnivore-approved recipes, I'd like to suggest my recipe for delicious tofu tacos with fajita vegetables.

The star of these tacos is their filling: crispy tofu strips tossed in spicy chipotle-infused marinade, and then cooked to perfection with fajita peppers and onions.

If that sounds complicated, trust me: it's not! Better yet, you probably have all (or most) of the ingredients at home right now.

Better yet, these tacos can easily be made gluten free: just use tamari or coconut aminos instead of soy sauce in the marinade.
