π Easy lentil and spinach soup for cold days
Happy Hump Day! I'm heading back home today from the food blogger conference that I told you about in one of my recent emails. There were so many "big-timer" food bloggers there that I often felt kind of "star-struck". Thankfully, most of them were very down-to-earth, so whenever I got courage to come up to some of them, they were happy to chat. I've been to Las Vegas once before, during my very first trip to the US back in 2005 (gosh, I'm old π ). It was nice to check out some places that I remembered from that time, especially the magical Bellagio fountains. Now that I'm heading back to the Gulf Coast, I'm crossing my fingers that the weather over there cooperates, and my flight goes on as supposed. It's been very cold there (I mean, "Florida cold", but still cold enough for the schools to shut down in my town π) So, for today's recipe, I decided to share something warm and cozy - hopefully you find it helpful if it's cold in your area too. Meet my Instant Pot lentil and spinach soup - an easy recipe that even Instant Pot newbies will ace. This soup is rich, flavorful, with a wonderful aroma from a simple spice mix inspired by the traditional Indian cuisine. (Nothing that you can't find in a regular grocery store, I promise!) I'm using canned coconut milk in this soup, but if you want to keep it leaner (or can't have coconut for health reasons), feel free to use plain unsweetened non-dairy yogurt instead. Another worthy substitution: using kale instead of spinach. I originally created this recipe to use spinach, but when I tried making this soup with kale, I realized that I actually like it better that way.
