⚜️ A perfect recipe for Mardi Gras dinner


Did you know that tomorrow is Mardi Gras?

In case you know what it is - laissez les bons temps rouler!

If not, no worries! This is a Louisiana's take on Fat Tuesday that's celebrated in the Southern US like there's no tomorrow πŸ₯³

(Even though we all know that tomorrow exists just fine, it even has its own name, Ash Wednesday πŸ˜„)

if you ever find yourself in New Orleans in the couple weeks before Mardi Gras, you'll witness a scene just like in the GIF above, only x1000.

(I'm pretty sure my husband and I still have a giant bag full of beads from one Mardi Gras ball we went to in New Orleans years ago πŸ˜„)

Anyway, no matter what your plans are for tomorrow, you might be interested in having a dinner ready for you when you come home (from a Mardi Gras celebration or from work).

This is why I love my recipe for easy Creole-style vegan jambalaya.

While it can be made on the stovetop, I always make it in the Instant Pot because it's so convenient: I can sautΓ© the veggies, add the rest of the ingredients, and either pressure cook it right away, or, if I need it later, set a timer so it's ready when my family is.

This jambalaya has all of the traditional flavors of Cajun cuisine, yet it doesn't require a laundry list of hard-to-find ingredients.

Besides, it can be made with white or brown rice.
