πŸ˜‹ Vegan Bolognese pasta with an unusual ingredient


Tell me if it's true: when you first went vegan (or started thinking about eating more plants/less meat), one of the first vegan dishes you've probably tried was some sort of pasta.

It's no wonder: there are A LOT of vegan pasta recipes out there.

One of the most popular pasta dishes in the (not just vegan) food blogosphere is Bolognese pasta.

What's not to love? It's delicious, comforting, and fairly easy to make.

Usually vegan Bolognese recipes call for lentils, or mushrooms, or some type of plant-based meat crumbles as a substitute for the traditionally used meat.

For today's recipe, I decided to go the unconventional way, and used soy curls* instead.

The result? A flavorful, "meaty" Bolognese sauce that's much lighter than its traditional non-vegan version, yet just as hearty and satisfying.

This sauce calls for simple plant-based ingredients, and comes out super creamy and rich. I went the traditional way by using fettuccine pasta here, but my blog readers have told me that they've served it with rice and loved it.
