π One of our family's favorite pasta dishes
If you're anything like me, you probably love simple recipes that can be quickly thrown together for an easy weeknight dinner. If that dinner ends up being delicious and kind of fancy-looking, that's always a plus. One recipe that falls under such description is my Easy Vegan Balsamic Veggie Pasta. It's been in our family's dinner recipe rotation for years because it's super easy to make. Basically, you roast some veggies (or sautΓ© them in a wok), make a quick no-cook balsamic sauce, and then toss everything with cooked pasta of your choice. I also like to add vegan sausage, but that's totally optional. Some cannellini or kidney beans work great as a sausage substitute. Since I cook this pasta often, it was one of the first recipes I added to Veg Easy (my new vegan recipe and meal planning app) when I first started publishing recipes there. This way, I can include it into our family's weekly meal plan whenever I make it, and all the ingredients will be added to the grocery shopping list so I have everything ready to go.
