βοΈ Easy Irish soda bread for St. Patty's Day
Before we proceed: remember I told you a few weeks ago that I was getting ready for a colonoscopy? I promised to document the prep process (my diet in particular), and make a YouTube video about it. Well, it took me forever to edit it (as always π ), but I finally published that video - and I'm inviting you to check it out! Heads up: I know that some people on my email list have opted out of receiving emails about my YouTube videos. But I thought that this subject was important for a lot of us, so I decided to share the video with everyone. Click on the image, and you'll be taken to YouTube to watch the video: Better yet, I made a printable PDF guide with the exact 2-day meal plan I followed, and recipes I made in this video π€© Get this guide over here:
If you know someone who could find this information helpful, please share this video with them. Thank you! Anyway, on to today's recipe! In case you forgot, St. Patrick's Day is this upcoming Monday! Since we're all about vegan food here, I'd like to share a recipe that I always make for my family around this time: my delicious and easy vegan Irish soda bread.β Traditional Irish soda bread recipe is quite simple, but it does call for buttermilk. Thankfully, I've figured out a way to skip it, and make the most amazing vegan Irish soda bread ever! This soda bread is delicious and hearty, with a hint of sweetness from raisins and a touch of spice from caraway seeds. I love to spread a warm slice with some Miyoko's vegan butter, and enjoy it with a cup of tea. If baking bread from scratch sounds intimidating to you, no need to worry: this bread is not yeasted, so there's no need to wait till it rises, or deal with the possibility of things going wrong. Better yet, the whole thing comes together in just one hour start to finish! Check out the recipe here:
I also have this recipe in video form on YouTube - check it out here.β
Happy baking! Best, Alina from Vegan Runner Eats + Adventures in Vegan Living
