Recently my husband and I were re-watching Seinfeld (a show I would pick over Friends anytime TBH π).
Among all the ridiculous stuff that happens in that show, there are some fairly smart ideas sprinkled in every now and then.
Like eating a BIG salad for lunch.
This made me think: I haven't been eating that many salads recently, so I should probably get back into it.
Especially since I have a perfect recipe for a salad that's tasty, healthy, AND won't leave you hungry in 30 minutes: my kale and cannellini bean salad with oil-free ginger-miso dressing.
The salad itself is pretty straightforward - kale, beans, a few sliced vegetables. But what really "makes it" is the delicious oil-free dressing made with fresh grated ginger, miso paste, lime juice, maple syrup, and a splash of water.
Even if you're not into kale salads, this recipe is is worth checking out for the dressing alone - it's good on just about any fresh veggies!
